Trail Mix Cookies

No sand or stone in these hearty cookies, but they’re chock-full of good stuff like nuts, coconut and fruit! They’re great for lunches or after-school snacking. From the kitchen of Blair McVeigh and Lesley Williams.

IngredientsTrail Mix Cookies
1 cup butter or margarine
1 cup shortening
2 cups brown sugar
2 cups white sugar
4 eggs
4 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
2 cups corn flakes
2 cups oatmeal
1 cup pecans, chopped
1 cup coconut
14 oz. dried fruit bits
1/4 cup sunflower seeds

Preheat oven to 350 degrees. Cream butter and sugars. Add in eggs; beat well. Sift flour and baking soda and baking powder. Combine with butter mixture and mix well. Stir in remaining ingredients. Drop cookies by the spoonful onto a greased baking sheet. Bake for 15 minutes. Makes 100 cookies.
